Garden Melon Salad

 

Serves 4 to 6

2 medium-sized, ripe melons, peeled and cut into bite-sized pieces
Juice from 2 limes, or to taste
1 tablespoons honey, or to taste
Salt to taste
2 shallots, thinly sliced
1 ripe red chile (hot if desired), seeded and very thinly sliced
Extra virgin olive oil to taste

Place the melon in a large bowl and sprinkle with the lime juice, honey and salt. Allow the mixture to sit until the salt is dissolved, then toss in the shallots and chile. Taste and adjust seasonings, then drizzle with olive oil to taste.
