Serves 6
3 ripe freestone peaches
Grapeseed oil, or other flavorless oil
1/3 cup sugar
1 tablespoon ground cinnamon
1 pint ice cream or sorbet (peach, vanilla, berry, chocolate, whatever flavor you like that’d go with peaches)
About 1/2 cup candied almonds
Prepare a grill to medium hot. Cut the peaches in half and remove the pits. Slice a thin piece off of the round side of each peach so that the finished peach will sit flat, pit-side up. Brush all cut sides of the peaches lightly with the oil. Mix the sugar and cinnamon together and sprinkle the mixture on cut all the oiled surfaces of the peaches. Grill the peaches pit-side down until lightly charred, 2 to 3 minutes. Turn the peaches and continue grilling for 2 to 3 minutes.
Arrange the grilled peaches in 6 small bowls. Top each with a scoop of the ice cream. Garnish with the almonds and serve.
