Nectarine and Chicken Breast Salad with Macadamia Nuts

This salad is very good using supermarket rotisserie chicken breasts. You can also use the shredded meat from one whole rotisserie chicken.

 

Serves 4

10 ounces spring mix salad greens
2 nectarines
1/2 small red onion
1 bunch cilantro
1/4 cup bottled sesame ginger salad dressing, or more to taste
Kosher salt
Freshly ground black pepper
4 cooked chicken breasts
1/4 cup chopped, toasted macadamia nuts

Place the greens in a large mixing bowl. Pit and thinly slice the nectarines; add to the lettuce. Thinly slice the onion; add to the lettuce. Roughly chop the cilantro; add to the lettuce. Add the dressing and toss. Add salt, pepper and more dressing to taste. Divide the salad among 4 plates.

Cut the chicken breasts into 1/2-inch slices. Arrange one sliced chicken breast on top of each salad. Top with the macadamia nuts and serve.
