There are several versions of this recipe in my grandmother's cookbook, including one clipped from a Manischewitz ad. As my brother remembers, she was very proud of the way these rolls “puff up like bread.”
Makes 10 to 12 rolls
2 cups matzo meal
1 tablespoon sugar
1/2 teaspoon salt
1/2 cup vegetable oil or shortening
1 cup water
4 eggs
Preheat an oven to 375°F.
In a large mixing bowl, combine the matzo meal, sugar and salt; set aside.
In a medium saucepan, bring the oil and water to a boil. All at once, pour this mixture into the matzo mixture and stir, mixing thoroughly. Let stand 15 minutes.
One at a time, stir the eggs into the mixture, mixing thoroughly after each egg.
With oiled hands, shape the dough into 10 to 12 balls, 2 1/2 to 3 inches in diameter. Place the balls on a greased cookie sheet and bake 50-60 minutes.
