Pineapple Lime Dipping Sauce

This is a sweeter sauce best paired with a slightly sweeter wine.

 

Makes about 1 1/4 cups

1/2 cup fresh pineapple chunks plus any accumulated juices (or 1/2 cup canned pineapple chunks plus 1/4 cup of their juice)
1/4 cup soy sauce
1/4 cup fresh lime juice
3 tablespoons granulated sugar
3 tablespoons honey
2 tablespoons coarsely chopped fresh cilantro
1 tablespoon coarsely chopped garlic
2 teaspoons toasted sesame oil
2 teaspoons kosher salt
1/4 teaspoon chile garlic sauce

Combine all ingredients in a food processor or blender and process until smooth. Add a little water if necessary to achieve a slightly thick but saucy consistency. Serve at room temperature in individual bowls, or refrigerate, covered, for 2 or 3 days.
