Salmon Tartare

 

Serves 4 to 6 as an appetizer

1 pound wild California salmon, finely diced
2 tablespoons roasted garlic oil (recipe below)
2 tablespoons chopped chives
Finely grated zest of 1 lemon
Kosher salt
Freshly ground black pepper

In a large bowl, combine the salmon, garlic olive oil, chives and lemon zest. Add salt and pepper to taste. Serve immediately.

Roasted Garlic Oil
Makes 1 cup

20 cloves garlic
1 cup grapeseed, canola or other neutral-flavored oil

In a small saucepan over very low heat, combine the garlic and oil. Cook until the garlic is light golden brown, about 1 hour. Strain. Reserve the garlic cloves for another use (mash or puree and use them on pizza or in a salad dressing, for example).
