(Sushi Rice Seasoning Mixture)
Makes about 3/4 cup
1/2 cup rice wine vinegar
2 tablespoons mirin (Japanese rice wine)
1/4 cup sugar
4 teaspoons kosher teaspoon salt
In a small saucepan over medium-high heat, combine all the ingredients, stirring to dissolve the sugar and salt. Set aside to cool to room temperature.
